John Linneman, a writer from the Digital Foundry website, has discovered that the original PS5 box logo’s mention of 8K, 4K120, and HDR has been updated to remove the 8K feature (although it still appears on the Thai Sony website).
During the Sony reveal, it was stated that the PS5 would support 8K through future updates, but the issue lies in the lack of native 8K content. Apart from The Touryst game supporting 8K60, the graphics are reminiscent of Minecraft, possibly leading Sony to abandon this capability.
A similar scenario occurred with the Xbox Series X, which initially claimed to support 8K before Phil Spencer later admitted that 8K is not necessary at the moment. The future remains uncertain regarding its necessity.

TLDR: The PS5 and Xbox Series X initially touted 8K support, but the lack of native content and practicality led to the removal of this feature from the consoles’ marketing materials.
